Beetroot & Bean Harissa Tagine
Ingredients:
6 Beetroot
2tbsp coconut oil
1tbsp Smokey paprika
2tbsp Harissa paste or powder
2 red onions
4 sticks celery
Beetroot stalks
1 tin black beans
1 tin butter beans
2 tins coconut milk
A pinch of Salt and Pepper
Method:
Wash and chop beetroot and carrots in mouth sized chunks ready to roast, keep the healthy looking stalks of beetroot and chop into small chunks. Melt coconut oil in roasting tin then place beetroot in and shake cover with smokey paprika, salt and pepper and put in oven for 35mins on 180.c. Melt coconut oil in pan, chop onions, celery and beetroot stalks and soften in pan. Once softened, add bloody beetroot and harissa paste and keep on low to infuse. Add in beetroot and carrot and mix well, then add tins of coconut milk. Wash beans and add to the mix before. Bring to a simmer and season to taste with salt and pepper. Voila.
